The Summer BBQ Bring Along

“Come over for a BBQ.  Bring an appy or salad  . . . or something to share,” he says.  But what does he want you to bring?  Well, let me tell you.  He wants you to bring your famous potato salad — the classic BBQ dish!  (Don’t have a famous potato salad?  You can borrow mine!)Potato Salad PhotodinnersWhen someone asks how to make your new famous potato salad, tell them to combine:

  • 1/4 cup mayonnaise
  • 5 medium potatoes, boiled until tender but still firm
  • 4 eggs, boiled
  • 1 cup chopped radish and/or celery
  • 1/2 cup diced onion
  • 1/2 cup sweet pickle relish
  • 1/4 tsp minced garlic
  • 1/4 tsp celery salt
  • 1/4 tsp red pepper flakes (if you want a little kick to it)
  • 1 tablespoon Dijon mustard
  • ground black pepper to taste
  • Sprinkle paprika on top for that fancy shmancy look

Et voila!

    I tried this and it was GREAAAAAAAT, and I usually don’t like potato salad!

    I made this. Its pretty solid, but tastes closer to an egg salad than potato, although that may be my fault for lowballing the potatoes.

    Yum! I love relish and hard-boiled eggs in a potato salad, tres excellent!
