Nothing in the Fridge; Eggs on Toast

Alone for dinner tonight and the empty fridge beckons: perfect night for a quick and easy meal. I used oil and garlic instead of butter for topping the toast to increase the flavor.

List of ingredients:

  • Egg
  • Bread
  • Olive oil and garlic (about 1/2 a clove).
  • Veggies (I had lettuce and tomato)
  • Pepper

    ever tried making “eggs in a basket”? Use a small juice glass or cookie cutter an cut out a circle of a slice of bread. Put some butter (or oil) in the pan, place the slice of bread in an crack open the egg in the hole of the bread. Season to taste an cook to over medium flipping once.
